In Genoa you really have to eat the famous focaccia. The ingredients are very simple. Just flour, water, brewer’s yeast, salt and oil. But in the hands of the Genoese bakers it becomes a real and true delicacy.
Among the variations you should try the one with onions. Focaccia with cheese is typical of Recco, a small town 20 km away from Genoa.
Genoa is famous all over the world for pesto. This is a sauce prepared with basil, cheese, oil, garlic, salt and pine nuts. It is ideal to serve on pasta, in particular trofie or trenette.
But Genoese cooking is not just focaccia and pesto. There is also farinata, cima, torta Pasqualina (Easter Pie), verdure ripiene (stuffed vegetables)… and then stockfish, castagnaccio, cappon magro, pandolce, canestrelli… all you have to do is taste them!
